Cris, I do plan to post the salmon later today - it was great but could use some tweeking and I will be working on perfecting it!  The pork is in the crock pot for the enchiladas and I would be happy to post that recipe too, although I don't really have a recipe!

Danielle, if  you've ever eaten a reuben, that is how the corned beef should taste, perhaps Trader Joe's did a different twist.  I feel like I am 30 posts behind, but I plan on a full cheese post very soon.  Probably not til the weekend as it is a busy work week.  I am still eating the corned beef from Monday - it makes great leftovers for breakfast.

Sea, I drank enough cider and whiskey for all of us - new tip, pour the whiskey in the cider for extra kick!

Hope you're having a great time!  I made the Niman Ranch corned beef from Trader Joe's last night, with boiled cabbage and roasted Yukon potatoes.  It was the first time that I've ever had corned beef, and I found the flavor rather peculiar, to tell the truth.  I'm going to make hash with the leftovers (about three pounds-- lots to freeze for later).  We aren't doing anything exciting tonight, as my husband is recovering from the flu that got me last week.  

I'm looking forward to hearing about any cheese adventures that you had in the Northwest!</description>
