Here is a link to the plantains.  They are called patacones in Ecuador, where I first tried them and tostones in Puerto Rico.  All you do is slice them in 1 inch size slices, fry them up, let them cool a bit and then squash them until they are flat and fry them again. Here is another recipe from Ecuador that I want to try that I think you might like too.  Muchines de Yuca.  Grated yuca balls stuffed with cheese.  I spent years wondering how to recreate my first meal in Quito after traveling for 24 hours, and then found this recipe.  Ours were served with a wonderful aji which was a salsa made from tree tomatoes or tamarillos. http://whats4eats.com/recipes/r_st_muchines.php  I find this site to be a great start when searching for ethnic recipes when I can't find blogs that cook the cuisine I am interested in (or I can't read the language of the blog!).  I will post the empanada recipe.  I looked for a long time to find recipes with only masa in it, as they would traditionally be made in Mex.  We tried it last fall, and will be tweaking it this time around (hoping for less greasy and more filling).

I do plan to give your bibimbap a try in the near future.  I haven't had tempeh in ages!
